Chickpea Tabbouleh Salad

I have to admit, this dish, was more for me than for MOO, I didn’t like my chances of having him eat any of this, and I was right. He saw it, and he looked at me like I was insane. I had to share this dish nonetheless because it was so tasty!! We served ours with steak but would be equally as good with any meat or fish. Or alone as a light lunch. 

Make it with or without a thermomix, recipe below. 

INGREDIENTS 

1/2 C Burgal Wheat 

1C Boiling Water 

1x Lebanese Cucumber, diced 

1x Packet Cherry Tomatoes, Halved 

1x Lemon, juiced 

1x Tin Chickpeas, drained 

Parsley and Mint 

4x Spring Onion, chopped 

METHOD

  1. Cover wheat with boiling water, cover and simmer for 10 minutes to cook. 
  2. Combine herbs and spring onions (speed 9 for 10 seconds if using TMX) 
  3. Dice Vegetables
  4. Drain Wheat
  5. Combine wheat, herbs, vegetables and chickpeas
  6. Dress with olive oil mixed with lemon juice 

Like I said this was a fussy fail but I ate this for days and never tired of it! Delicious!

Recipe 

  • 1x Skinless chicken breast 
  • 145g Rice Vermicelli  
  • Sweet-Chilli Sauce 
  • 1x Lime 
  • 50g Capsicum – Sliced thinly
  • 50g Carrot – Sliced thinly
  • 50g Zucchini – sliced thinly 
  • 50g Corn Kernels 
  • 50g Brocoli – cut into small pieces 
  • 50g Pak Choi – shredded 
  • Small handful Coriander leaves 

Method 

  1. In a griddle pan cook the chicken. Let it cool then shred. 
  2. Cook vermicelli in boiling water for about 3-4 minutes then drain 
  3. To make the salad, put all the vegetables together – add the vermicelli noodles and chicken. 
  4. Juice the lemon and add to salad 
  5. Add sweet chilli sauce (do this to your own liking – I used maybe half a cup?? – just until well coated) 
  6. Cover and sit in the fridge for about 2 hours before serving. 
  7. Top with some coriander leaves and a fresh squeeze of Lime before serving. 

Per Serve/: Calories: 134 / Fat: 1.5g / Saturated Fat: 0.4g / Salt: 0.3g

This salad was so easy and cheap to make, looks great and appealed to MOO. He helped and picked at it as I was assembling. A food processor would make this so much faster when it comes to prepping the veg but we just used a mandolin and in this case it worked wonders! 

MOO even asked to have some in his lunch box for tomorrow! So we are all having a healthy lunch! 

MOO only ate about 3/4’s of his serving which I thought was a pretty decent effort given he is only 5 and was faced with a bowl full of raw vegetables!! 

This made about 6-8 servings so well worth the effort! 

We have stored ours in air tight containers and wouldn’t want to eat it after any longer than 3 days (if it lasts that long!!)
